Lingonberry is among the leaders in the content of vitamins, so it is often used not only for culinary purposes, but also for medical purposes. The berry which has not passed thermal processing is especially useful. Lingonberry mashed with sugar is made for the winter for two reasons: firstly, it is very tasty, since sugar neutralizes the bitter taste of this berry, and secondly, it is useful because all the valuable properties of lingonberry are preserved in this delicacy. It will be easy to store it if you follow the technology of preparation and storage rules.

Cooking features

Lingonberry contains a natural preservative, benzoic acid, thanks to which it is stored for a long time, even if it is not subjected to heat treatment, and no salt, sugar, vinegar and other preservatives are added to it. However, it can deteriorate if you do not follow some rules.

  • Before cooking for the winter cowberries, mashed with sugar, it should be well looked through, removing every single damaged berries. If they fall into the cold jam, they ruin it.
  • Wash the berries, dropping them in a colander repeatedly into the water and allowing it to drain. This allows you to keep the shape of the berries, not to damage them when washing.
  • It is important to carefully dry the berries before grinding them. This increases the safety of the finished jam.
  • Banks must be used only sterilized. What kind of lids to close them, metal or nylon, you decide, most importantly - do not forget to boil them.
  • It is possible to store lingonberries wiped with sugar only at a low temperature, that is, in a refrigerator or cellar. If it is necessary to keep it at a higher temperature, for example in an unheated storeroom, the jam should be heated to 95 degrees, but not boiled, and only after that should be laid out in cans. In this case, the banks must be sealed with metal lids. A lingonberry that has undergone such processing in a refrigerator can be stored for two years, just in a cool room (up to 16 degrees) - up to two months.

Recipes can have different amounts of sugar. In fact, if other berries or fruits are not part of the dessert (the exception is irga), the amount of sugar will not affect its safety. You need to navigate in this case only to your taste: the less sugar, the more noticeable will be the characteristic bitterness of lingonberries. In this regard, usually less than 1 kg of sugar per 1 kg of berries is not used, but adding more than 2 kg of granulated sugar per 1 kg of lingonberry does not make sense either.

  • lingonberry - 1 kg,
  • granulated sugar - from 1 to 2 kg.

  • Rinse the lingonberries and dry them, spilling out on a cloth or dishcloth.
  • Grind the lingonberries in the way that you think is most convenient: using a blender, meat grinder or manually, forcing the berries through a metal sieve with a wooden spoon. The easiest way is to crush the berries with wooden pulp, which is usually used to make mashed potatoes.
  • Pour rubbed cranberries with sugar.
  • Cover the container with lingonberries with a thin cloth to prevent insects from entering it, and leave it overnight.
  • In the morning, sterilize small jars.

Lingonberry for the winter - recipes without cooking

This method will greatly facilitate the life of many housewives who simply do not have time to cook jam several times in a row.

For him, you need to constantly monitor, stir, so that it does not burn, otherwise you can ruin the whole batch of delicious jam. And who will reimburse the money spent per kilograms of sugar?

After all, there is always an alternative, and it is even very much superior to our usual way of making jam. Preserving lingonberries without cooking has several advantages that any busy housewife will surely pay attention to:

✔ Save time. You do not have to stand for hours at the stove, stirring the jam, which, due to its high sugar content, can easily burn,

✔ Preservation of all vitamins. Some recipes imply short-term heat treatment, but it practically does not affect the vitamin composition of lingonberries,

The possibility of long-term storage, even in the refrigerator. Such recipes do not require conservation, so you will be provided with constant access to the contents of the jar.

By the way, it is this berry that is endowed with benzoic acid, which helps it maintain its freshness and beneficial substances for quite a long period.

Thus, you can enjoy fresh berries even when there is a blizzard outside. In addition, the entire set of vitamins during the cold season will definitely come in handy.

Recipe for freezing cranberries

If you have just been in the garden and returned with a whole basket of lingonberries, then it is urgent to make a decision about what to do with such wealth? Of course, you can immediately start cooking jam, but this will take a lot of time and effort.

Or maybe you are determined not to gain extra pounds over this winter, that you are even ready to give up the most delicious jam? It is for such a case that there is a freezing of fresh berries, during which the cold will preserve all their useful substances.

First of all, we must rid the main part of the berries from damaged specimens. They obviously can not fit into the picture of healthy jam.

After that, you need to thoroughly wash the selected berries, and give them a little time to dry.

Remember that any product must be dry before freezing. After all, if a certain amount of moisture still remains on the surface of the berries, then they simply freeze each other, and it will be rather difficult to separate them.

And so, you will have each berry separately, and you will be able to take as many frozen berries as you need.

Dried lingonberry berries are laid out on a special flat surface (tray, board) so that each of them is frozen.

After ten minutes, remove our crystal berries and put them in sachets with tightly closing clasp.

Thus, you can eat fresh lingonberries absolutely at any time of the year and add them to your favorite dishes.

Lingonberry sugar beads

We can fill with sugar as whole berries, and ground ones. Which way you want to choose depends only on the purpose of such sugar berries.

For example, if you want to decorate a cake or use red beads as a garnish when serving baked poultry, then you should prepare the largest berries in advance.

And if you need to use lingonberry puree as an additive to the plombira, then the ground berries are perfect for this role.

In general, the technique itself is not so important, but you can be sure that both methods will help preserve the beneficial properties of this berry.

Regardless of the method, you will need the same amount of ingredients:

  • 1 kg of fresh lingonberry berries
  • same amount of sugar

Instructions alternately perform actions for the preparation of lingonberries with sugar:

1.We choose high-quality berries and wash them with plain clean water, after which we place them in a colander in order to drain the excess water.

2.We lay out slightly damp berries on the newspaper or any fabric.

3. In the already sterilized jars we distribute a small part of the prepared berries, which we immediately “cover” with a layer of white sugar, after which we re-pack the berries.

4. It is on this principle that the banks will be filled. Please note that the top layer should consist of sugar.

5.To save space, from time to time we will need to shake the jar (only so the contents will be distributed as closely as possible).

6.We close our container with a tight lid and place it on the most inconspicuous shelf of the refrigerator, since leaving such tasty food in a conspicuous place is dangerous enough (it can be washed at once).

Faded lingonberry with sugar for the winter

Compared with the previous method, the option of chafing berries will not be so simple, but you can use such mashed potatoes as an additive for various desserts.

And in general, you can just have a spoonful of ready-made berry puree, or even use it as a basis for compote.

It is not necessary to boil such a mixture, which means that at least some of the time will be saved. Even frayed berries will be able to preserve all their useful substances.

The berries themselves will need a standard amount - 1 kg, but the amount of sugar can vary from one to two kilograms, but we will deal with this a little later.

The process of making grated lingonberries with sugar will consist of the following steps:

1.The most attractive berries should be washed several times, after which they should be placed in a colander so that excess water leaves the berries immediately.

2.After that, put all the contents of the colander on a paper towel, folded in three. It immediately absorbs all moisture, so that the berries dry out faster.

3.Fold the berry into a large pot and fill it with sugar. But how much of this sweet sand you need, you decide for yourself. The thing is that the berry itself is a bit bitter, and sugar will help to eliminate this bitterness.

But if you have a perverted taste, then you can get by with one kilogram of sugar, which also saves all the vitamins of lingonberries.

4.Berries can be ground both manually and with a blender, this is how you like it. Of course, the blender will do this work in less than a minute.

But if you do not want to get a homogeneous red mass, and strive to preserve some sort of crushed berries, then it is better to do everything with your own hands.

5.Mix the lingonberries along with the sugar, and leave the whole mixture for a while so that the sugar dissolves as best as possible.

We regularly mix our puree with a wooden spoon, because the metal, when interacting with certain vitamins, contributes to their destruction.

6.As soon as you stopped noticing the transparent crystals in scarlet puree, this means that the sugar is still dissolved and you can proceed to the final stage of preparation - the distribution of the mixture in glass jars (they should be sterilized beforehand).

Having received several full cans with this beautiful berry dessert, it is necessary to close each of them with a dense plastic lid.

We put our good in the fridge, preferably not in the most prominent place.

We are waiting for winter, when there will be not so many sources of vitamins, then it will be possible to try. Although whom we cheat? That same evening, one bank will be devastated in an instant. So, not a single jar will survive until winter, so it is better to make a bigger stock, especially if you have a large family.

1. Village mode

First you need to prepare all the ingredients, including lingonberry berries. To prepare the syrup, we need half a glass of sugar, a liter of purified water and half a teaspoon of salt.

The cooking process will be carried out in several stages:

- we wash selected berries, and we place them in any vessel that can be made of wood or glass. An enameled pan is also suitable, but the main thing is not to use metal products, as it will adversely affect the chemical composition of the berry,

- Next, prepare the syrup: in the boiled water, dissolve the prescribed amount of sugar and salt, then boil until they are completely dissolved. If you want a spicy taste, you can also add a few cinnamon sticks. We leave our liquid for a while to cool it,

- we distribute in equal quantity our berries to the sterilized vessels beforehand, after which we pour them with a warm syrup. Cover each jar with gauze,

- in a few days you can cover all the vessels with dense plastic lids, after which we lower them into a cool basement, where they will wait for their time.

Interestingly, the berry, even at room temperature, does not get moldy, but the fact is that its composition contains bactericidal substances, which, in fact, prevent possible fermentation.

2. Spicy lingonberries with syrup

In general, all the same ingredients will be needed as for the first recipe, only some of them will be used in other proportions:

  • Two tablespoons of sugar
  • Two teaspoons of salt

We also need different spices, which you can combine, depending on your taste preferences.

But our recipe implies the simultaneous use of cinnamon in its natural form (sticks), vanillin, ground black pepper, cloves.

If you are impressed with all the spices, then you can safely follow the recipe, since the taste will be simply unforgettable.

But if you do not like excessive sharpness, then you can exclude ground pepper, for example.

The following actions will be:

- we touch the berries, we immediately wash them all at once, after which we wait until they dry out of moisture. After that, we should split the berries into several cans,

- Syrup is prepared on the same principle: boil water and add all the ingredients to it. When the sugar is dissolved, and the aromas of cinnamon and vanilla spread around the house, you can immediately turn off our fill. We are waiting for her temperature to be at room temperature,

- fill the berries with warm pouring and leave to stand for two days, while covering each jar with gauze. After two days, we cover the cans with nylon covers and place them in a cool place (it may even be a storeroom).

This soaked cowberries should be left for a long time, because every day its taste becomes brighter, thanks to the interaction with our spicy syrup.

Every day the syrup will become redder, which means that the exchange of substances between the syrup and the berries is still in progress.

By the way, you can safely drink the syrup, because it somehow resembles a cool summer compote, and even with spices. If you are a fan of sugary drinks, the amount of sugar for such a volume of syrup can be adjusted.

Wet cowberries for the winter - recipes

In general, we really can preserve one part of the berries in the juice, which we get from other berries. Thus, the concentration of vitamins in one jar of such a drink with berries will be off the scale.

So, let's consider in stages the process of this type of canning, for which we need a sufficiently large number of berries, therefore, it is better to make a decent stock right away.

  1. In total, we will need two kilograms of berries, which must be immediately cleared of twigs, leaves, and other debris. Already cleaned berries must be moved to a colander, in order to get rid of excess fluid.
  1. We divide our berries equally: we immediately distribute one kilogram into half-liter jars, which we, of course, sterilized beforehand. And the other part is waiting for a juicer test in order to get a clean and healthy juice. By the way, the juice is best to let the smaller berries, but large ones just have to show off in the bank.
  1. In the resulting lingonberry juice dissolve about 200 grams of sugar. You can squeeze all the juices from the berry using a juicer, but if you don’t have one, you can simply rub the berries and then squeeze the juice from the mashed potatoes. And this is done with simple gauze.
  1. Lingonberry juice must be boiled for ten minutes, then immediately pour it our red lingonberry beads. We close each jar with a lid and voila, lingonberries in its own juice is ready.

If you move a little away from traditional types of canned lingonberry for the winter, you can see that it is not so difficult to harvest such a berry.

In addition, we have a huge selection in the form of a variety of recipes, each of which is different in its own way. Moreover, you do not have to stand at the stove all day long, and wait until this jam is ready.

Lingonberry can be harvested dietary conservation with a minimal addition of sugar, and thus, we can save all its nutrients.

After all, the recipes proposed by us do not imply heat treatment. So, we can even in the winter to saturate your body with useful vitamins, and, moreover, not to gain extra pounds.
